PORK TENDERLOIN WITH APPLE SALSA
Ingredients:
Pork:
2 lbs pork tenderloin
4Tbsp olive oil
4 cloves minced garlic
2 Tbsp chili powder
1 Tbsp ground cinnamon
2 tsp salt
Apple Salsa:
2 crunchy sweet apples (fuji or honey crisp), cored and diced
1 red bell pepper diced
1 lime juice
1/2 red onion finely chopped
1/2 C cilantro chopped
1 tbsp honey
1/2 tsp salt
1/2 tsp ground pepper
Method:
Pork:
Preheat oven to 400
Whisk 3 Tbsp olive oil with garlic, chili powder, cinnamon, and salt in a large plate. Add the pork and turn each piece to coat with the cinnamon mixture.
Heat 13” cast iron skillet to medium with remaining olive oil until hot. Add the pork and brown on all sides, 2-3 minutes per side.
Move skillet to preheated oven and bake until 145 in the thickest part of the pork approx. 20 minutes. Remove, cover with foil and let rest 10 minutes before slicing and serving with the apple salsa.
Apple Salsa:
In a medium bowl, combine all the salsa ingredients and stir well to coat the apples with the lime juice and other ingredients. Refrigerate until ready to serve.
