PROTEIN BANANA BREAD
Makes 2 loaves
4 ripe bananas
6 Tbsp coconut oil (or butter)
1 cup applesauce
1⁄2 C raw honey
1⁄2 C coconut sugar
2 eggs
2 tsp vanilla extract
3 cups buttermilk Kodiak Cakes
1 tsp baking soda
1 tsp ground cinnamon
1⁄2 tsp sea salt
Preheat oven to 350 degrees
Mash the bananas in a bowl. Mix in the coconut oil, applesauce, honey and coconut sugar. Add eggs and vanilla.
Add the Kodiak Cakes, baking soda, cinnamon and sea salt. Mix until just combined.
Grease two, 9x5 inch loaf pans. Pour mixture evenly into both pans and bake for 40-50 minutes.
