Christmas Ginger Cookies

CHRISTMAS GINGER COOKIES

1 1/2 C unsalted butter

2 C granulated sugar

3 eggs

1/2 C molasses

4 1/2 C all purpose flour

4 tsp ground ginger

2 tsp baking soda

1/2 tsp baking powder

1 tsp ground cinnamon

1 tsp ground cloves

1 tsp salt

1/2 C coarse raw sugar (I use turbinado)


1. Mix softened butter and granulated sugar well. Add eggs and molasses.

2. Add half of the flour, ginger, baking soda, baking powder, cinnamon, cloves and salt. Combine well.

3. Stir in remaining flour.

4. Use large cookie scoop for extra large chewy cookies (I use #14), or smaller (#70) size for regular cookie size. 

5. Roll in turbinado sugar before placing on baking sheet.

6. Bake in oven at 350 F for 12 minutes for large cookies or 8 minutes for smaller cookies. DO NOT OVERBAKE. Check early.

7. Slam hot cookie sheet on counter to crack cookies and sprinkle more sugar.

Tried to get the cat in the family Christmas pic, but he wasn’t having it. He hates coming in the house.

This is by far our favorite ginger cookie recipe we have tried. It is from A bountiful kitchen.
