Fresh Homemade Pizza

PIZZA DOUGH

Dough for one 15" crust


1 1/2 C (180g) flour

1 (0.25 oz) pkg active dry yeast

1 tsp (5ml) sugar

3/4 tsp (3 ml) salt

1/2 C + 2 Tbsp (150ml) water 105-115F

2 tsp (10 ml) oil

cornmeal


CHEESE PIZZA

1/2 C (120ml) pizza sauce

1 Tbsp (15ml) grated parmesan cheese

2 C (300g) shredded Mozzarella cheese 


BBQ CHICKEN PIZZA

2 chicken breasts, cooked and cubed

1/3 C (80ml) BBQ sauce

1/4 C (40g) chopped red onion

1 C (150g) shredded cheddar cheese

1C (150g) Mozzarella cheese


In your Bosch or other stand mixer, place flour, yeast, sugar and salt with steel blade. Process five seconds. With machine running, slowly pour water and oil until dough forms. Process for about one minute. Do not over mix. 

I think one of the keys to making our pizza turn out amazing in the oven is the wolf pizza stone insert we just keep in our lower oven. Preheat wolf oven to 400 F on stone mode. (Set oven extra early because even when oven is to temp, it still takes time to bring the thick stone to temp).  Roll pizza dough on cornmeal-dusted surface into 12" circles (about 6" for individual pizzas). Place on pizza peel. Spread top with sauce, cheeses and favorite toppings. When oven is ready, slide pizza onto bake stone. Bake 6 to 10 minutes, until golden brown.

Another favorite way to bake our pizzas if we make individual sizes is on the BBQ. We preheat our pizza tiles on the BBQ. The only difference with baking them on the BBQ is it seems to take a bit longer than the oven, but the flavor is unbeatable!

When we have pizza night at our house the kids usually invite a bunch of friends over so I end up multiplying the dough recipe by 6 or 9. We will divide up the dough so each person gets 1/2 of a single batch to make an individual pizza. 

For an appetizer I will usually use the first couple batches of dough to bake one pizza crust with olive oil drizzled around, fresh ground coarse sea salt and fresh rosemary on top and serve chopped in little rectangles after baking for 7 minutes. I will use one more crust recipe and melt a couple Tbsp butter on the top and sprinkle a cinnamon sugar mix then bake about 7 minutes and chop in little rectangles so each piece is a couple of bites.
