YARA'S GNOCCHI
1.5 kilo russet potatoes
250 grams ap flour (keep 50 of it aside)
Salt to taste
Peel and boil russet potatoes. Don’t over boil. While hot rice potatoes once then twice onto counter in pile. Once all potatoes riced, add 200 grams flour and salt. Knead into ball. Add more flour as needed.
Roll into ball. Cut off small piece. Roll into long snake. Cut off pieces of gnocchi. Add finger print.
Boil quick until pop up to top remove instantly. Butter. Add sauce and Parmesan.
