CANDIED PECANS
Ingredients:
1 C white sugar
1 tsp ground cinnamon
1 tsp salt
1 egg white
1 Tbsp water
1 pound pecan halves
Preheat oven to 250.
Mix cinnamon, sugar and salt. Set aside.
Whisk egg whites and water together in separate bowl until frothy. Toss pecans in egg white mixture. Coat well. Add sugar mixture to pecans. Spread coated pecans evenly on baking sheet.
Bake in preheated oven stirring every 20 mins for 1 hour total.
Try not to eat them all in one sitting.
One of our favorite ways to eat candied pecans is throwing them on top of salad with fresh strawberries when they are in season. Add spinach, goat cheese, sliced strawberries, candied pecans and even Katie’s chicken if serving as a complete meal. Top with poppyseed dressing or just a nice balsamic reduction.
