Red Velvet Cake

RED VELVET CAKE

Kenny’s favorite from the Bubble Room in Captiva

3 3/4 C self rising flour 

2 1/4 C sugar 

1 1/2 tsp baking soda

3 large eggs beaten 

1 1/2 tsp cocoa powder 

1 1/2 tsp vanilla

1 1/2 tsp vinegar

2 1/4 C. Vegetable oil

1 1/2 C buttermilk 

1/3 C red food color 


Preheat oven to 350. Sift flour, sugar, cocoa, and baking soda together. Add oil, eggs, milk, vanilla, vinegar and food color. Best in high for three minutes. Pour into three greased, floured 8” cake pans and bake for 30 minutes. 


Simple syrup:

1 C water

3/4 C sugar

Mix together. Bring to a boil. Cool. Brush with a pastry brush into all layers of cake. Not a required part of recipe but keeps the layers moist. 


Frosting:

16 oz cream cheese 

1 C butter 

2 lb confectioners sugar 


Cream butter and cream cheese. Add sugar until light and fluffy. Frost cooled cake.
