OATMEAL RAISIN COOKIE


OATMEAL RAISIN COOKIE 


Call me old fashioned, but I love a good oatmeal raisin cookie perfectly under-baked just so. This is my favorite oatmeal raisin cookie from a bountiful kitchen. 


INGREDIENTS:

2 cups raisins, regular or golden

1/4 cup water

1 cup butter, softened 

1 cup granulated sugar

1 cup packed brown sugar 

2 large eggs

1 Tbsp vanilla 

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt 

2 3/4 cups AP flour 

2 1/2 cups old fashioned oats

1/4 cup cornstarch 


METHOD:

Preheat oven to 375


Microwave raisins and water 2 minutes, covered with plastic wrap. Let sit 5 minutes.


Cream together butter and sugars in stand mixer until smooth. Add eggs and vanilla, beat in.


Add all remaining dry. Ingredients and mix just until al let and dry ingredients are incorporated. 30 seconds at MOST. 


Drain raisins and fold into dough.


Use 2 inch cookie scoop to place on undressed cookie sheet. Flatten slightly with palm. 


Bake for about 7-8 minutes until crust has barely formed. Cookies will be slightly undercooked.
