CHICKEN FAJITAS
For 3/4 lb chicken tenders
Mix together:
2 Tbsp avocado oil
1 Tbsp lime juice
1/2 tsp salt
1/2 tsp cumin
1 clove garlic, minced
1/2 tsp chili powder
1/2 tsp paprika
1/2 tsp red pepper flakes
1/2 tsp black pepper
Slice:
1 red pepper
1 green pepper
1 purple onion
Mix seasoning ingredients together. Slice chicken tenders long way. Mix chicken with seasoning.
In large cast iron skillet on medium high heat, add some avocado oil. Place peppers/onions on one side and seasoned chicken on there to begin browning. As they cook and brown mix in together chicken and peppers, reduce heat to finish cooking.
Serve with uncooked tortillaland tortillas (or homemade!!), guacamole, salsa or Pico, sour cream and black beans and rice.
