Vanilla frozen custard // Joeys favorite

Ingredients needed to make French Vanilla Frozen Custard (makes about 1 1/2 quarts):
  • 1 cup milk
  • 3 cups heavy cream (unwhipped whipping cream)
  • 1 cup sugar
  • 1/4 tsp salt
  • 5 egg yolks
  • 1 Tbs. pure vanilla
Steps:
  1. In a medium saucepan over medium heat, whisk together the milk, heavy cream, 1/2 cup sugar and salt just to the point where it comes to a simmer.
  2. In a medium bowl, whisk together the egg yolks and remaining sugar until pale and thick.
  3. Slowly whisk 1 cup of the cream mixture into the yolks until well incorporated. Then whisk in 1 more cup.
  4. Add the egg mixture into the sauce pan and over low heat stir until it thickens to the point where it coats the back of the spoon (a wooden spoon is best for this). You must stir the entire time to keep the eggs from cooking.
  5. Strain the mixture through a fine sieve into a bowl.
  6. Place the mixture into the refrigerator and chill about 2 hours.
  7. Add the mixture to your ice cream machine and mix 20 minutes (this assuming you have an electric ice cream machine).
