Basic Crepes

 BASIC CREPES--Saturday morning favorite

1 C AP flour

2 large eggs

1/2 C milk

1/2 C water

1/4 tsp salt

2 Tbsp butter, melted

Mix half the liquids + eggs together, add the Salt and flour. Stir until thick. Throw in blendtec and add remaining liquid, pulsing until clumps gone. Don't overblend adding air to the mix.

    Spray crepe griddle heated to medium heat. Scoop about 1/4 C batter for each crepe. Use wooden crepe tools to spread in circular motion. Cook about 1 minute on first side, flip and cook another minute until done.
