Buttermilk Pancakes and Pancake Soup

BUTTERMILK PANCAKES

4 Tbsp melted butter

1/4 C granulated sugar

2 eggs

1 tsp salt

1 tsp baking soda

2 tsp baking powder

1 1/2 C buttermilk (I usually mix milk and 2 Tbsp lemon juice, let sit to curdle)

2 C AP flour


Mix the above ingredients in order. Once you add flour, mix until lumps are gone. Do not overmix!

Heat griddle to medium heat. Cook as you would any pancake and flip once bubbles rise to the top. Don't turn the griddle up too high or you will have runny centers.


PANCAKE SOUP (coined by our cute 4-year old, Patrick)

AKA Buttermilk syrup, AKA bubble syrup

Bring to a boil:

1/2 C butter

1 C granulated sugar

1/2 C buttermilk

Once it reaches a boil, remove from heat and stir in:

1 tsp vanilla

1 tsp baking soda


This much buttermilk syrup is good for a double batch of the pancakes. If I make a single batch of the pancakes I cut the syrup ingredients in half.
