Homemade Noodles

HOMEMADE NOODLES

from the kitchen of Grandpa Seifert 1966

We use these every October for our chicken noodle soup on Halloween


4 eggs (1 egg per person)

1 Tbsp milk for each egg

Salt

Add enough flour to make a hard and stiff dough. Roll out newspaper thin and let sit a few minutes. Roll up and cut thin strips. Unroll and let dry.

Cook in whatever soup base you are using about 15-20 mins.

Uncooked noodles can be frozen and used later.

CHICKEN NOODLE SOUP

In cast iron dutch oven, sauté white onion, diced carrot, minced garlic and diced celery in avocado oil until onion is translucent. Add chicken broth, salt, pepper, bay leaves and rotisserie chicken. Add noodles about 10 minutes before ready to serve. Only add as many noodles as you think you will eat that night. Save uncooked noodles for leftovers so they don't get soggy.
