Lasagna

LASAGNA

Makes 1 9x13 and 1 8x8



If you don’t have time to press homemade lasagna noodles, use:

3 packages rana lasagna noodles 


Cheese filling :

1.5 pounds ricotta room temperature

8oz bar cream cheese softened

1 pound cottage cheese 

3/4 cup Parmesan 

2 tsp dried oregano 

1/8 cup chopped fresh Italian parsley 

2 eggs 


Bolognese sauce :

1 pound pkg ground turkey, browned & chopped tiny

2 jars Wellesley marinara (save 1/2 jar to spread bottom of pans + last layer on top of lasagne)


Shredded mozzarella between layers. One handful for each 8x8 layer, two handfuls for each 9x13 later


Layers: 

Plain red sauce

Noodles 

Cheese (about one 1/4 cup per noodle sheet)

Thin layer meat sauce 

Shredded mozzarella 

Repeat 3-4x

Final layers:

Noodles, plain red sauce, shredded mozzarella, shredded Parmesan, sprinkle fresh parsley
