PUMPKIN CHOCOLATE CHIP COOKIES
Ingredients:
8 Tbsp unsalted butter, melted
4 Tbsp dark brown sugar
1/2 C granulated sugar
1 tsp vanilla
1/2 C canned pumpkin puree
1 1/2 C flour
1/4 tsp salt
2 tsp pumpkin pie spice
2/3 C semi sweet mini chocolate chips
Instructions
Whisk together the melted butter, brown sugar, granulated sugar, vanilla and pumpkin. Evenly sprinkle the flour, salt and pumpkin pie spice on top. Use a spatula to fold everything together, and then fold in the chocolate chips.
Place the cookie dough in the fridge for 30 minutes while preheating oven to 350.
Use small cookie scoop to drop balls onto cookie sheet. Bake for 9-10 minutes
CHEATER VERSION
Pour one pkg duncan hines spice cake mix into mixing bowl.
Add one 15 oz can pumpkin puree, mix well.
Stir in 10 oz mini semisweet chocolate chips.
Bake at 350 for 10-12 minutes.
HOMEMADE PUMPKIN PUREE
Just take the carved pumpkin guts, separated from the seeds, puree and use the same weight as you'd normally use from the can.
PUMPKIN MUFFINS
Sometimes we like to bake these cookies in a mini muffin tin to pretend they are a little healthier and eat them with dinner or chili. Just cut out the chocolate chips (or keep them in!).
