ROASTED CAULIFLOWER
This is the Cauliflower we use each year on St. Patrick’s day to serve with our corned beef. They pair so nicely together.
1 head cauliflower
1/2 C mustard
1/2 C mayo
1/8 C minced onions
1 tsp parsley
Olive oil drizzle
8 oz cheddar cheese
-Set oven to 400 degrees. Cut bottom off cauliflower to level it.
-Place in cast iron roasting pan with about 1/8 cup water on the bottom.
-Drizzle and rub olive oil over cauliflower head.
-Cover with roasting lid or tinfoil. Bake 30 mins.
-Remove foil and roast another 15-30 minutes, checking tenderness with fork along the way
-Remove from oven once tender, spread mustard sauce and cheese on top
-Broil on high 2-3 minutes to make the cheese crispy.
For the mustard sauce:
Mix mustard, mayo, minced onions (or onion powder), and parsley
