BERRY CRISP
Original recipe from Ellie’s American girl bake book. As with any crisp or cobbler, always DOUBLE the topping. I don’t write out the calculated doubled amount because it gets confusing which recipes are already doubled or not. So the recipe is a single topping recipe and needs to be doubled.
INGREDIENTS:
TOPPING
4 Tbsp unsalted butter
1/4 C packed light brown sugar
1/2 tsp cinnamon
Pinch of salt
1/2 C old fashioned oats
1/4 C all purpose flour
FILLING
2 pounds fresh or frozen berry mix
1 tsp vanilla
1/2 C sugar
1/4 C flour
Pinch of salt
Homemade vanilla ice cream for serving
METHOD:
Mix topping ingredients together. Begin with butter and sugar. End by adding oats and flour.
Preheat oven to 375. Prepare 8x8 dish or 9” skillet
Weigh berries in a bowl, add vanilla and stir. Add sugar flour and salt, mix together.
Pour berry mix into skillet, crumble topping over the top. Bake in oven 30-35 minutes until topping is golden and fruit mix is bubbly.
Cool 20 minutes and serve warm with homemade vanilla ice cream.
