AUSTRIAN GOULASH SOUP
This was one of the kids favorite dishes from our summer in Europe. We were served this old family recipe as our apple strudel was baking in the ovens. When we make it at home now, we are instantly transported back to the coziness of the Austrian kitchen in the mountainside cave.
INGREDIENTS:
250 grams beef (bone shoulder)
200 g potatoes, raw and peeled
40 g oil
200 g onion, finely chopped
20 g fine grained paprika (not Spicy)
Dash of vinegar
1 tsp tomato paste
1 1/4 liters beef broth
Salt, caraway, ground marjoram
2 cloves garlic pressed
20 g flour
METHOD
Cut meat a potatoes separately into about 1 cm cubes
Heat oil and sauté onions until golden brown. Add meat, mix well and stir in paprika powder. The paprika easily burns so quickly deglaze with vinegar, add tomato paste, and blend in broth, add seasonings and braise for about 40 minutes.
Add potatoes, cook for several minutes, or until they are soft but firm. Finally blend in flour with water (1/8 liter), stir into he boiling goulash soup and allow boiling down for five minutes.
