Guilt-Free Alfredo

GUILT-FREE ALFREDO

28 oz chicken broth 
1/2 C flour 
1/2 tsp garlic powder or 4 cloves garlic, minced 
1/2 tsp. pepper 
2/3 C. plain yogurt 
1 red bell pepper, diced
6 C. hot cooked noodle-style pasta 
8 Tbsp grated Parmesan cheese 
16 oz rotisserie chicken breast

In medium saucepan gradually mix broth into flour, garlic powder and pepper until smooth. 

Over medium heat, cook until mixture boils and thickens. Stir constantly. Remove from heat. 

Stir in yogurt. Toss with fettuccine, chicken, diced bell pepper and 6 Tbsp cheese. Sprinkle with remaining cheese.
