Mom's Cornbread


MOM'S CORNBREAD
(Skulls above)

1 ¼ C flour 
¾ C corn meal 
¼ C sugar 
½ package instant pudding (vanilla) 
2 tsp baking powder 
½ tsp salt 
3/4 C. milk 
1/2 vegetable oil 
1 egg beaten 

Oven at 400 8 or 9 inch pan or 12 muffins 
Bake 20-25 minutes. 


SOUTHERN CORNBREAD
Yields 9x13 pan (Muffins in above photo)

2 C all purpose flour
1 1/2 C yellow or white cornmeal
4 eggs
1 1/2 C granulated sugar
1 C vegetable oil
1 1/2 tsp baking soda
1 1/2 tsp salt
3/4 tsp baking powder
melted butter

Preheat oven to 350. Grease 9x13 pan

Whisk flour with cornmeal. Add all dry ingredients. Whisk. Add oil and beaten eggs. mix until just combined. 

Bake until a toothpick can be inserted and removed with large, soft crumbs, about 30-40 minutes (half that if making muffins).
