Cafe Rio Recipes

CAFE RIO SWEET PORK 

3 lbs pork - (pork loin, boneless) 

1 16 oz jar of salsa 

1 can of coke 

1.5 cups brown sugar 


Place pork in crock pot with salsa, coke and brown sugar. Cook on high for 4 hours. Shred pork with forks. 


CAFE RIO CHICKEN 

1 bottle Kraft Zesty Italian Dressing 

1 Tbsp chili powder 

1 Tbsp cumin 

3 Tbsp minced garlic 

6 chicken breasts 


Cook all together in crock pot on high for 4 hours. Shred meat. 


CAFE RIO RICE

3 cups chicken stock  

4 tsp minced garlic 

1/2 bunch cilantro, chopped 

3/4 tsp salt 

1 Tbsp avocado oil 

3 cups rice 


Chop cilantro into fine pieces. Bring water to boil and add all ingredients. Simmer covered 30 minutes or until liquid is absorbed. 


CAFE RIO TOMATILLO DRESSING

1 buttermilk ranch dressing packet (make as per recipe with milk & mayonnaise) 

2 tomatillos (peel off dry skins/leaves) 

1/2 bunch cilantro 

1 clove garlic 

juice of 1 lime 

1 jalapeno 


Blend all ingredients in blender until smooth. Refrigerate. 


I serve with our homemade tortilla recipe. We also serve with guacamole, chips, black beans,  Pico de Gallo, spring mix, cheese and limes.
