Chocolate Gooey Butter Cookies

CHOCOLATE GOOEY BUTTER COOKIES


Ingredients:


1 teaspoon vanilla extract

Confectioner's sugar for dusting

1 (18 oz) box moist chocolate cake mix

1 (8 oz) package room temperature cream cheese

1 egg

1 stick room temperature butter


Directions


Preheat oven to 350 °


In a large bowl with an electric mixer, cream the cream cheese and butter until smooth. Beat in the egg. Then beat in the vanilla extract. Beat in the cake mix. 


Cover and refrigerate for 2 hours to firm up so that you can roll the batter into balls. Roll the chilled batter into tablespoon sized balls and then roll them in confectioner’s sugar. 


Place on an ungreased cookie sheet, 2 inches apart. Bake 8-10 minutes. The cookies will remain soft and gooey. Cool completely and sprinkle with more confectioner’s sugar, if desired. 


Makes about 2 dozen cookies.



Alternate: I like this recipe equally well, but I don’t always have a chocolate cake mix box on hand so I often use this one:

Ingredients:
1/2 cup (113g) salted butter, softened
1 package (8 ounces) cream cheese, softened
1 1/2 cups (300g) granulated sugar
1 large egg, room temperature
1 teaspoon vanilla extract
1 1/2 cups (187.5g) all-purpose flour
1/2 cup (65g) confectioners' sugar
3/4 cup cocoa powder
3 teaspoons baking powder

Beat the butter and cream cheese together for a couple minutes in Bosch. 

Add sugar. Add egg and Vanilla. 

Add dry ingredients and mix until no more white shows through. 

Cover and refrigerate dough to firm up.

Use cookie scoop to create balls. Drop into bowl of powdered sugar to coat completely and place on baking sheet.

Bake at 350 for 8 minutes.
