Chocolate Fudge Tunnel Cake

CHOCOLATE FUDGE TUNNEL CAKE

This one has been a favorite for years for our family Valentine picnic


INGREDIENTS:

Cake:

1/2 C boiling water

2 oz bittersweet chocolate, chopped

2 cups all purpose flour

3/4 C Dutch processed cocoa powder

2 C confectioners sugar

1 tsp salt

5 large eggs beaten, room temp

1 Tbsp vanilla extract

1 C granulated sugar

3/4 C light brown sugar

20 Tbsp (2.5 sticks) unsalted butter, room temp


Ganache:

3/4 C heavy cream

1/4 C light corn syrup

8 oz bittersweet chocolate, chopped


METHOD:

Preheat oven to 350 

Mix 1 Tbsp Dutch processed cocoa powder into 1 Tbsp melted butter and brush to coat the inside of bundt pan

Pour the boiling water over the chopped chocolate and whisk in medium bowl.

Beat together the granulated sugar, brown sugar and butter until light and fluffy about 2 minutes on medium speed. Turn mixer to low and eggs with vanilla. Add the cooled melted chocolate in water. Add dry ingredients until just combined. Pour into bundt pan.

Bake for 40-45 minutes or until the edges of the cake begin to pull away from the pan.

Cool cake in the pan on wire rack at least one hour before flipping onto cake plate. Cool another two hours.

For the ganache, combine the cream, corn syrup and chocolate in a small saucepan over medium heat. Stir frequently until smooth. Remove from heat and stir in vanilla. Set aside 30 minutes to thicken, then drizzle over cake with a spoon.
