CHICKEN ADOBO
From Jonny's Mission in the Philippines
Ingredients:
1-2 lb chicken thighs, cubed
1 small sweet onion, diced
4 cloves garlic, crushed
1/2 C low sodium soy sauce
1/2 C white vinegar
8 oz chopped fresh pineapple (or canned chunks)
Chopped green onions for garnish
White rice, steamed
Instructions:
Saute the garlic and onions together over medium high heat in large sauce pan.
Add cubed chicken, brown for a couple minutes
Add vinegar and soy sauce, cook chicken until done
Serve over rice adding pineapple chunks and green onion for garnish
