Texas Sheet Cake



TEXAS SHEET CAKE

2 C. Sugar 
2 C. Flour 
Mix the above ingredients together in lg. bowl. 

In a pan bring the following to a boil: 
2 Sticks butter 
3 heaping tablespoons cocoa 
1 C. water 

Pour the boiled mixture over the sugar and flour and stir in. 

Add: 
1/2 cup butter milk (can use regular milk plus one Tablespoon of Lemon Juice) 
2 beaten eggs 
1 tsp soda 
1 tsp vanilla 
1/2 tsp salt 

Pour cake mixture into a greased cookie sheet pan. Bake at 350 for 20-25 min. (I do 325 for 20-21 min). 

Icing- Frost while still warm 
Bring the following to a boil: 
3 heaping tablespoons cocoa
1 stick of butter 
6 Tablespoons milk 
Then stir in 1 pound or more powder sugar (just judge by consistency) 
1 tsp vanilla 
 Spread over cake 

(One year we tried baking the sheet cake in round pans and stacking as seen above. It still tasted amazing, but basically collapsed because it is so moist and delicate so definitely keep in the sheet pan).
